Qualla Berry Farm is part of a loose community of growers and marketers throughout western NC who are seeking to provide locally grown food to people who live and visit  the mountains. Beet Salad with Oranges, Olives & Chives
Beets and orange are a lovely flavor combination and this salad brings them together. 
The saltiness of the olives brings both a nice flavor and color contrast to the dish.
Prepare this early in the day and toss a couple of times to distribute the dressing. 
Bring back to room temperature and it will be on-the-ready as a lovely side dish for
steaks, fish or chicken.  Easy summer food which is bursting with flavor.

6 medium beets
3 oranges
1/2 cup pitted Kalamata olives
2 tablespoons olive oil
2 tablespoons rice vinegar
2 tablespoons grated fresh ginger
2 tablespoons chopped fresh chives
Salt to taste
Generous pinch of cayenne

Peel and coarsely grate beets by hand or food processor. Place in a medium bowl. Peel & seed two of the oranges, separate into segments and cut into bite-size pieces. Toss with grated beets & olives. In a small bowl, combine olive oil, vinegar, ginger, chives and juice of 3rd orange. Season with salt & cayenne, and stir into beet mixture. Allow to stand at room temperature at least 15 min., tossing occasionally. Salad gets better when marinated a few hours.
